I love fancy pizzas! This one is actually very quick and easy because it uses several canned ingredients. It can be made with your favorite pizza dough, or a mix or prepared crust of your choice. I found the chunky canned tomatoes were a nice change from traditional pizza sauce. In the pizza pictured here I used a sun-dried tomato sausage and it was just divine! Slicing the cheese into wide, thin slices instead of shredding it makes the pizza look more gourmet.

2 pizza crusts, or dough for 2 pizzas
2 tablespoons olive oil
1 (28-ounce) can Italian diced tomatoes (not plain canned tomatoes)
1 large red onion, thinly sliced into rings
1 (14-ounce) can artichoke hearts, drained
1/2 pound fresh sausage of your choice, squeezed from casing, cooked and drained
12 ounces fresh mozzarella, sliced
1 teaspoon Italian seasoning
red pepper flakes (optional)

Preheat oven to 400°F. Place pizza crusts on work surface. Brush all over with olive oil. Top crusts with diced tomatoes, onion, artichoke hearts and sausage. Arrange mozzarella slices on top. Sprinkle with Italian seasoning. Bake 10-15 minutes, until crispy and cheese is bubbly. Serve with red pepper flakes for the people that like an extra kick.

Serves 4

Add 1 tsp sugar and 1 Tbsp yeast to 1/2 cup water. Let stand 10 minutes. Add beaten egg to milk, plus yeast mixture. Mix well, then add flour and salt. Slowly add more flour if the dough is very sticky, but it should be just a bit wet/sticky. Work butter and basil into dough. Cover and place in a warm spot for an hour to rise. Will make one deep-pan pizza or two thin-crust pizzas.

      Yield: 6 Servings

      2 pk Beef flavor Mr.Noodles
Salt
3 c Water
1/2 lb Ground beef
1/2 c Mushrooms, sliced
15 oz Spaghetti sauce
3 T Parmesan cheese
1/2 c Onion, chopped
1/2 c Milk
1 Egg
8 oz Mozzarella cheese, grated
Aluminum foil

Cover pizza pan with aluminum foil. Build up foil edges to form about
1/2-inch tall rim around the edge. Lightly grease the aluminum surface.
Cook both packages of noodles with pinch of salt in water. Do not use
flavor packets. Drain noodles and set aside. Brown beef, onions, and
mushrooms together. Drain excess fat. Stir both flavor packets into meat
mixture. Set aside. Beat together egg, milk, and parmesan cheese. Stir this
mixture into noodles. Evenly spread noodle/egg mixture on to pizza pan.
Pour sauce over noodles. Sprinkle on meat mixture, top with cheese. Bake at
350 degrees for twenty minutes or until golden, bubbly brown. Let stand
five minutes before slicing. Great for parties.
